Our natural foods supplier just started carrying Califia Farms, but they don't have the unflavored iced coffee just yet. We'll keep an eye out for it!
"Donut friend in the oxy bakery????!!!! Thoughts??? Also how possible would it be to make acai bowls? Like as it gets closer to summer maybe; they're super healthy and refreshing and easy to make :)"
First Elsa's now Donut Friend? Who knows? All we can do is ask! However, we are requiring that our new vendors meet Real Food Challenge criteria, which in the case of local bakeries, they must also use 51% organic ingredients. As for the Acai Bowls, the price we think would be really, really high, but summer is the time for us to research such matters.

We're sorry to disappoint you, but the Marketplace may not be able to fit this in this semester. However, the Tiger Cooler had Chicken & Waffles as a Weekend Special on April 17 - we hope you caught that opportunity. Fried Chicken & Waffles will return to the Marketplace for fall 2015.
"I know a lot of people enjoy the small on-the-go packets of Justin's almond (and other nuts) butter -- I think there should be a sunflower seed butter option for those of us with severe nut allergies. There are the packets that could be sold: http://sunbutter.com/products/sunbutter-go/"
We checked with our vendors and none of them carry the individual packets of sunflower seed butter. Another thing for us to watch for :-)

The Tiger Cooler manager checked with their supplier, and although they are available, Larabars did not meet the price point necessary to sell them a price we feel is reasonable. Prices fluctuate however, and this may be possible in the future.

Good news! We've purchased a new product and you should be seeing a greater supply of bacon. We love bacon!!

We're sorry but Mozzarella is just a tad pricey for the self-service salad bar.

Our baker is just rotating flavors - banana, raspberry, etc. - never fear, the blueberries will return!
"Can we put Lifesavers in the vending machines in the Tiger Cooler, and maybe in the ones outside the library as well"
We contacted the vending supplier and put in your request. They agreed to stock Lifesavers. Look for them soon!
"Meal plans should have a limited amount of funding on them that can be spent off campus at local restaurants. I think this would encourage a positive relationship between Oxy students and the local community."

"Why are there nuts in the zucchini and banana bread? It seems like this would limit students with allergies from enjoying them! Maybe you could provide both options?
We do make nut-free versions of both, on occasion :-)

Thank you for reaching out! We agree that they are delicious, but unfortunately, they have not been very popular in the past. However, we would be happy to bring back the Refugiados if there is demand for them. For the remainder of the year, we will order small quantities to avoid waste, but you can expect to see them starting morning. Thanks again for your feedback.

"The Matzah spinach lasagna was delicious! What's the recipe?"
An annual Passover favorite, here's our Matzo Spinach Lasagna recipe:
2 Cups Ricotta or Small Curd Cottage Cheese (we actually make our own cheese for this)
4 Large Eggs
1 1/2 Cups Half & Half
1 1/4 Cups Grated Parmesan
1 tsp. Finely Grated Lemon Zest
1 tbl. Lemon Juice
Pinch of Nutmeg
Kosher Salt and Fresh Ground Pepper
1 Pound Chopped Frozen Spinach, Thawed & Squeezed of Excess Moisture
4 Sheets Matzo
- Pre-Heat Oven to 400 degrees. Brush bottom & sides of an 8x8 baking dish with olive oil.
- Whisk together cheese, eggs, half & half, 3/4 cup Parmesan, zest and nutmeg. Season generously with salt & pepper.
- In another bowl toss spinach with lemon juice, season with salt & pepper.
- Place 1 matzo sheet in bottom of baking dish. Pour 1 cup cheese mixture over matzo. Sprinkle evenly with one-third of spinach mixture.
- Repeat layers two more times. Top with remaining matzo and drizzle with remaining cheese mixture. Sprinkle with remaining 1/2 cup Parmesan.
- Bake, uncovered, until puffed and golden brown on top, 35 - 40 minutes (cover with foil if browning too quickly). Let cool 15 minutes then serve.
